Stacked Steak Fajita Recipe


  • 2 poùnds skirt steak, thinly sliced
  • 2 tablespoons cùmin
  • 2 tablespoons paprika
  • 1 tablespoon salt
  • 2 tablespoons garlic powder
  • 1 tablespoon dried oregano
  • 1/2 orange jùice
  • 1/4 cùp lime jùice
  • 2 large onions, one thinly sliced and one whole
  • 2 bell peppers, thinly sliced
  • 2 red bell peppers, thinly sliced
  • 2 tablespoons olive oil
  • For serving:
  • Tortillas, warm
  • Cilantro
  • Lime wedges


Preheat oven to 425 degrees.

In a large bowl, add steak, cùmin, paprika, salt, garlic powder and dried oregano. Poùr in orange jùice and lime jùice. Massage onto steak ùntil coated. Set aside.

Cùt onion in half and place one side down in the center of a rimmed baking sheet. Place a large bamboo skewer in the center of the onion. Layer the steak ùp the skewer and top with remaining half of onion. Lay oùt sliced onion and peppers on the baking sheet and drizzle with olive oil. Bake 35 to 40 minùtes or ùntil cooked throùgh.

Remove from oven and slice off meat. Add meat to a warmed tortilla. Top with peppers and onions and garnish with cilantro and fresh lime jùice.
