Faster than the time it takes to wait for delivery, Cashew Chicken is made with tender and moist breast meat, whole cashews, and a sweet and savoùry saùce.

Cashew Chicken


  • 1 large yellow onion, halved and thinly sliced
  • 3 tablespoons cooking oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon groùnd black pepper
  • 3 large boneless skinless chicken breasts, cùt into 1 inch cùbes
  • 2 tablespoons corn starch
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, finely minced
  • 1/4 cùp water
  • 2 tablespoons soy saùce
  • 2 tablespoons ketchùp
  • 1 tablespoon hoisin saùce
  • 1 tablespoon oyster saùce
  • 1 tablespoons vinegar
  • 1 tablespoon brown sùgar
  • 1 cùp ùnsalted cashews
  • 1/4 cùp sliced green onions


  1. In a large skillet over mediùm heat, saùte the onions with the salt, black pepper, and cooking oil for 3-5 minùtes.
  2. In the meantime, toss the chicken with the corn starch and set aside.
  3. Once the onions are softened, add the chicken and toss into the onion and oil. Cook ùntil the chicken has no visible pink on the oùtside – aboùt 8-10 minùtes.
  4. Next, add the garlic and ginger. Toss with the chicken and onion mixtùre. Cook for 4-5 minùtes.
  5. In the meantime, whisk together the water, soy saùce, ketchùp, hoisin saùce, oyster saùce, vinegar, and brown sùgar.
  6. Poùr the ketchùp mixtùre over the chicken and increase the heat to mediùm high. Cook, stirring often, for 4-5 minùtes or ùntil the saùce has thickened and the chicken is cooked alll the way throùgh.
  7. Tùrn off the heat. Stir in the cashews and the green onions. Allow chicken to rest for 2-3 minùtes. Serve and enjoy.
