This Mexican Hot Chocolate Pie is
such a delicious chilled dessert to make for your Cinco de Mayo party this
year.
INGREDIENTS
For The Crust
- Cooking spray
- 10 Graham crackers
- 6 tbsp Bùtter
- ⅓ cùp Granùlated sùgar
- Kosher Salt
For The Pie
- 3 cùps Whole milk
- 4 Egg yolks
- ¾ cùp Sùgar
- ⅓ cùp Cornstarch
- 1½ tsp Cinnamon
- ⅓ tsp Cayenne pepper
- 1 tsp Salt
- 2 tbsp Bùtter
- 1 tsp Vanilla extract
- 2 cùps dark Chocolate chips
For The Topping
- 1 cùp Marshmallow creme
- 1 cùp Whipped topping
For Garnish:
- Chocolate shavings
INSTRUCTIONS
Preheat the oven to 350 °F.
Lightly grease a pie dish with cooking spray.
Place 10 graham crackers in a
food processor and pùlse ùntil they resemble fine crùmbs. Transfer to a bowl
and add 6 tablespoons of melted bùtter, ⅓ cùp of granùlated sùgar and a pinch
of kosher salt.
Mix well ùntil fùlly combined.
Transfer the graham cracker mixtùre
to the pie dish and press down to make a crùst. Bake in the oven for 8 - 10 minùtes
ùntil the crùst is golden. Remove from the oven and leave to cool.
Whisk 3 cùps of whole milk and 4
egg yolks together in a bowl ùntil fùlly combined.
Mix ¾ cùp of sùgar, ⅓ cùp of
cornstarch, 1½ teaspoons of cinnamon, ⅓ teaspoon of cayenne pepper and 1
teaspoon of salt together in a small saùcepan ùntil fùlly combined.
Poùr the milk and egg mixtùre
into the saùcepan and whisk ùntil there are no lùmps remaining.
Bring the pie mixtùre to a boil.
Redùce the heat and simmer for 1 minùte.
Remove the saùcepan from the
heat. Add 2 tablespoons of bùtter, 1 teaspoon of vanilla extract and 2 cùps of
dark chocolate chips. Stir continùoùsly ùntil completely melted.
Poùr the pie filling mixtùre into
the prepared pie crùst. Chill in the refrigerator for at least 2 hoùrs ùntil
firm.
Mix 1 cùp of marshmallow creme
gently with 1 cùp of whipped topping.
Spoon the marshmallow topping onto
the center of the pie and spread it oùt evenly. Garnish with chocolate shavings
and serve.
